成熟的咖啡櫻桃來自班莎處理廠周圍約650戶獨立農民,這些咖啡樹野生在海拔18002200公尺的山區,絕大部分是衣索比亞原生種。這些咖啡果實會在處理廠內仔細的經過分類、去除果肉及發酵過程後水洗;並且放在架高的乾燥棚上,最初幾天每2-3小時就必須翻動一次,視天氣而定,大概需要1215天的時間乾燥,讓咖啡豆的水分降低在11%~12%左右,最後才能將生豆出口。
